Good Day Cafe was established in 2023 with its first brick-and-mortar opening in June 2024, in Long Beach, CA.

The Founder and CEO, Lindsey Mark, has had a lifelong dream of owning and operating a cafe of her own. This early ambition set her on a path to becoming a seasoned industry veteran. Starting humbly as a hostess in her early teens, Lindsey dedicated two decades to honing her skills and understanding every facet of the service industry. She immersed herself in various roles, from serving tables to managing operations, gaining invaluable insights along the way. 

For Lindsey, working in the service industry wasn't just a job; it was a lifeline and place for her deepest connections. As a single mother, the flexible scheduling and steady income provided her with stability and the means to support her family. Some of her closest relationships have been nurtured within the bustling confines of restaurants and bars, including the serendipitous encounter that led her to meet her now wife, Nikki Mark, while working at a local restaurant in Long Beach.

Throughout her career, Lindsey has remained deeply rooted in the vibrant communities of Long Beach and surrounding areas, cherishing the diversity and energy of these locales, which have become an integral part of her identity. What she loves most about her profession is the unpredictability and joy it brings. Each day presents a new challenge and a fresh opportunity to learn and grow.
